Nut Spice Fried Rice!

Alistair: “OK. Good idea.” Hangs up the phone. To himself: “What am I going to do?.”

IMG_8252Yes my friends, there is no limit or constraint on how you eat food. (As long as you don’t try to mix your soy ice cream with your tomato soup.)

Dish contains:

  • Mixed nuts (could also use chick peas, beans, mock meat, peas)
  • Cauliflower (could also use carrots, broccoli, etc)
  • Shallots (spring onions)
  • Sultanas (could also use apple?)
  • Rice
  • Oil (sunflower)
  • Spice (paprika - could use your favorite)
  • Soy sauce (or salt)

Soak the nuts for a few minutes while you prepare the rest of the ingredients. This is ensure that thy are soft to eat.

IMG_8259 Fry them (medium heat) first until they are a little braised, add the cauliflower, braise, then add sultanas and spice and cover.

Cook covered for a few minutes, then add the shallots. Mix evenly, and add the rice. and soy sauce (or salt). If you wish you could add nuttelex.

The trick to making the rice crumble and fry nicely is to add just a bit of water before breaking it up and adding it.

IMG_8263Cook for a few minutes more, then serve or store.

I’m taking this dish to Angela at work, and because I heard that hot food and plastic don’t mix, I’m lining the container with aluminum foil.
