Actually I have no idea what a real risotto is. Never mind. Food traditionalists will have long left this blog alone. As far as I know, it means wettish veggies on top of rice, preferably alborio.
Today’s lunch contains…
- Quick cooking veggies (cucumber, capsicum, cabbage)… could include tomato, onion, mushroom etc.
- Fake ham (or other protein of choice - perhaps beans or peas)
- Rice
I heated some paprika in the oil (I used olive oil today - not the best at high temperatures!), slightly browned the ham (and mushrooms, if you’re using them) and then added the cabbage. Place a lid on to trap moisture and reduce the need for stirring which can break up the fake meat. After a couple of minutes add the other veggies and the herbs.
To boost the nutritional value of the meal I added some precooked mung bean and lentil gravy from the fridge. It really gave the dish a thick, wet boost.
Add your seasoning, be it salt or soy, and munch away.
